One thing you'll learn very quickly when reading this blog is that I find any excuse to bake. This time the excuse is Father's Day, and I think it's a pretty good one.
As I live clear across the country from Seattle, driving down to good ole' Columbia City Bakery wasn't the most practical option. So I flew! Kidding. But I did fly down to the grocery store (ha). Now I am making this for a Father's Day barbecue (a little heavy for the occasion but I couldn't resist!) so I wanted to cater to everyone's taste buds (no whiskey).
I'm actually just using this picture for inspiration. I pretty much ignored the entire description of it. The cake I'm going to be using is a recipe for one of the best chocolate cakes around, in my opinion. It's Romano's Macaroni Grill Smothered Chocolate Cake. Click the link, click the linkkkk. So scrumptious! I'm going to be frosting this sucker with butterscotch icing and top it off with dark chocolate shavings.

Chocolate Cake
Ingredients:
- 1 1/2 cups mayonnaise (trust me)
- 2 cups granulated sugar
- 2 1/4 cups cake flour
- 1/2 cup cocoa powder
- 2 teaspoons baking soda
- 1 1/3 cups brewed coffee
- 1 cup heavy cream
- 10 ounces chocolate
- As many dark chocolate shavings as you desire!
- Preheat oven to 350 degrees F. Grease a 9 x 13 pan.
- Beat mayonnaise and sugar together.
- In a separate bowl, mix flour, cocoa powder, and baking soda.
- Add half of the flour mixture to the mayo/sugar mixture.
- Add half of the coffee to the batter.
- Add he rest of the flour mixture and then the remaining coffee.
- Pour the batter into your pan. Bake 25 to 35 minutes.
Butterscotch Frosting
Ingredients:
- 1/2 cup butter, softened
- 1/2 cup butterscotch chips, melted and cooled
- 1 teaspoon vanilla extract
- 5 cups confectioners sugar
- 5 tablespoons of heavy cream
- In a bowl, beat butter, melted butterscotch chips, vanilla extract and powdered sugar with an electric mixer. Don't worry if it's dry.
- Add cream 1 tablespoons at a time and combine.
- Continue adding cream and beating until you get the frosting consistency that you like.
- Frost chocolate cake and sprinkle chocolate shavings on top.
